There is a breakfast hotspot known as Polly’s Pancake Parlor, and it is located in SugarHill, near New Hampshire’s White Mountains. They have been serving mouthwatering pancakes since 1938 and are still drawing a line out the door daily.

Their made-from-scratch pancakes are topped with delicious New Hampshire maple syrup, so you know you are in for a local treat!

We visited this past weekend during our trip to New Hampshire’s Ice Castles. Here is everything you need to know about this New England treasure.

Polly’s Pancake Parlor Story & History

The land where Polly’s now stands has a rich history dating back to the early 1800s when Brigham Hildreth settled there, establishing Hildreth Farm and a cobbling shop.

His son, Chester, inherited the farm, which eventually became known as Hildex Farm, when Lucy, Chester’s daughter, married Wilfred “Sugar Bill” Dexter. Wilfred, known for turning maple into a primary crop, married Pauline “Polly” Taylor during the Great Depression, and in 1938, they opened Polly’s Pancake Parlor, initially as a tearoom featuring their maple products.

Under Nancy and Roger Aldrich’s management from 1949 onwards, Polly’s Pancake Parlor expanded its menu and reach, becoming a national sensation. Despite Wilfred and Polly’s passing in the 1960s, Nancy continued to enhance the business, introducing more pancake flavors and making them available for home consumption.

Today, Kathie and Dennis Cote oversee Polly’s, continuing its legacy of homemade goodness, from stone-grinding flours to producing maple sugar and maple spread.

Although the tearoom underwent renovation in 2014, maintaining its historic charm, Polly’s remains a beloved destination, offering a wide array of homemade delights and welcoming guests warmly. Polly’s Pancake Parlor reviews do not lie; the food here is absolutely delicious, and its historic past plays a role in it.

Polly’s Pancakes Parlor

Now let’s talk about the pancakes, which are created using their homemade recipe! Polly’s Pancake Parlor stone grinds their wheat, buckwheat, and cornmeal flours in-house so that all the freshest ingredients are used.

The pancakes are already delicious, but what puts them over the top is the plate of goodies you get to dress them with. All meals include real maple syrup and Polly’s Maple Spread. Polly’s maple sugar is available upon request.

They also have weekly specials where a new pancake batter is featured.

I recommend trying the Pancake Sampler, which lets you get three pancakes with whichever batter you choose and one side. I got the sampler with two gingerbreads, one plain, and bacon. It was the perfect meal to have before starting our road trip back home.
