Yep, the same place where trains once rolled in and out now serves up craft pints and some of the best fish and chips we’ve had on the road. Here is everything you need to know!

Siboire Dépôt is a popular microbrewery in Sherbrooke, Quebec, located inside the city’s former train station.

The space has been beautifully repurposed, blending industrial charm with modern touches.

High ceilings, big windows, and visible brewing tanks give it an authentic brewery feel, and the beer is brewed right on-site.

With a wide selection of craft beers, a full pub-style menu, and a lively atmosphere, Siboire Dépôt is one of Sherbrooke’s top food and drink destinations.

The Famous Fish & Chips at Siboire

We stopped in for a late lunch after the spa, and went straight for the fish and chips—and wow.

They use a recipe crafted by folks who trained with the National Federation of Fish Friers in England, and it shows.

We did the Fish & Chips Tasting Platter, which featured original Fish & Chips recipes – haddock, cod, and salmon. The crispy fish was served with fries, coleslaw, and homemade tartar sauce!

We upgraded our fries to poutine because we are in Canada, after all! The poutine featured fresh homemade fries, cheese curds, and homemade Sherbière BBQ sauce. Yum!

What Beers to Try at Siboire Dépôt

Siboire offers a rotating list of house-brewed beers, and the variety means there’s something for everyone—from bold IPAs to easy-drinking wheat ales.

We tried the gluten-free beers since we had a lot of gluten already. The beers were really good! I couldn’t even taste the difference.

The fact that the beer is brewed just steps from where you’re drinking it adds to the experience. If you’re into craft beer, Siboire Dépôt is one of the best breweries in Quebec to visit.

You’ll find Siboire Dépôt at 80 Rue du Dépôt, right in downtown Sherbrooke. It’s close to shops, parks, and the river, making it a convenient stop whether you’re passing through or spending a few days in town.
